Quick and easy "Thanksgiving" meal for any day of the year

Recipe Ingredients for Turkey meatloaf

2 lbs ground turkey, 97% lean
2 large eggs
6 oz stove top stuffing mix
1/2 tbsp extra virgin olive oil
1 tsp garlic powder
1 tsp black pepper

Recipe Directions for Turkey meatloaf

  1. Preheat oven to 350

  2. Put oil to side

  3. Combine remaining ingredients in a large mixing bowl

  4. Form into a loaf

  5. Lightly coat the top of loaf with oil to prevent drying

  6. Loosely cover loaf with aluminum foil

  7. Bake for 40 minutes

  8. Remove foil and continue baking for 20 minutes or until internal temperature reaches 170 for 15 seconds using a meat thermometer
