Based on Jamie Eason's recipe. Edited because the ground turkey packages I bought were 1.25 pounds each, instead of 1 pound each.

Recipe Ingredients for Turkey Meatloaf Muffins

2 1/2 pounds extra lean ground turkey
3 celery stalks
1/2 large onion
4 carrots
3 egg whites
1 1/4 cup quick cooking oats
1/2 teaspoon cumin
1/2 teaspoon basil
2 1/2 teaspoon dry yellow mustard
2 1/2 teaspoon black pepper
2 1/2 teaspoon chili powder
1 1/2 teaspoon salt
2 1/2 tablespoon garlic powder

Recipe Directions for Turkey Meatloaf Muffins

  1. Preheat oven to 375 degrees.

  2. Spray 12 count muffin pan with non-stick cooking spray.

  3. Finely chop all vegetables, and mix all ingredients together in a large bowl.

  4. Roll the mixture into balls and place in muffing pan. Muffins should be about the size of a tennis ball.

  5. Bake for 40-45 minutes.
