Turkey Meatballs in Wine Sauce from "The New Dieter's Cookbook" by Better Homes and Gardens, p. 287

Recipe Ingredients for Turkey Meatballs in Wine Sauce

1 egg white
1 cup soft bread crumbs
1/2 cup finely chopped onion
2 tablespoons skim milk
1/4 teaspoon dried thyme
1/4 teaspoon salt
1 pound ground turkey
2 cups fresh sliced mushrooms
2 tablespoons cornstarch
1 teaspoon instant chicken bouillon granules
1/3 cup dry white wine
2 tablespoons snipped fresh parsley
4 oz dry (3 cups cooked) no yolk egg noodles

Recipe Directions for Turkey Meatballs in Wine Sauce

  1. In a medium mixing bowl stir together the egg white, sfot bread crumbs, HALF of the onions, the milk, thyme, salt and a dash of black pepper.

  2. Add turkey; mix well and shape into 1 inch meatballs.

  3. Spray a 13x9x2 baking pan with nonstick coating.

  4. Place meatballs in the baking pan. Bake, uncovered, in a 350 degree oven for 30 -35 minutes.

  5. In the meantime, cook the noodles according to the directions on the package.

  6. Spray an unheated large skillet with nonstick coating. Add mushrooms and remaining onion. Cook until onion is tender. Stir together 1 cup COLD WATER, cornstarch and bouillon granules. Stir cornstarch mixture into mushroom mixture. Cook and stir until thickened and bubbly. Stir in meatballs and wine; heat through. Stir in parsley.

  7. Serve over hot cooked noodles.
