3 meatballs per serving. Meatballs made with turkey and TVP cooked with mushrooms and spinach in a warm sauce. Savory and filling, great over rice. Made with TVP to cut down on fat and meat in general.

Recipe Ingredients for Turkey Meatballs in Spinach Mushroom Sauce

4 oz ground turkey
1/8 cup textured vegetable protein
1/4 cup peppers, frozen, chopped, thawed
1/4 cup frozen onions, chopped, thawed
1 tbsp oatmeal, dry
4 large mushrooms
1/2 cup frozen chopped spinach
3/4 cup cream of mushroom soup
1 tbsp garlic powder
1/2 tbsp chili powder
1 tsp sage
1 tsp black pepper

Recipe Directions for Turkey Meatballs in Spinach Mushroom Sauce

  1. Add soup to approximately 3/4 cup water in a small saucepan. Add all spices to taste except black pepper. Bring to boil while preparing meatballs, then turn on low and allow to simmer and partially cool until needed.

  2. Reconsitute TVP in 1/8 cup water.

  3. Crumble turkey in bowl, add peppers and onions (I use a frozen mirepoix blend instead). Add oatmeal and TVP, mix well.

  4. Lightly spray medium pan with spray olive oil.

  5. Heat pan on medium high heat and add sliced mushrooms and spinach.

  6. Saute until spinach is somewhat soft and mushrooms are still somewhat firm.

  7. Turn down heat to medium, add meatballs and brown.

  8. When brown, add soup, stirring well.

  9. May be neccesary to add more water or a small bit of cornstarch or flour.

  10. Bring to boil, stirring constantly.

  11. Keep at boil for about 2 minutes, then turn down to simmer for about 5 minutes.

  12. Remove pan from heat and allow to sit for five minutes.

  13. Sauce will thicken.

  14. Serve over pasta or rice.
