A lighter meatloaf - good with mashed potatoes and gravy.

Recipe Ingredients for Turkey Meat Loaf

2 1/2 lbs ground turkey
3 oz matzo (crushed, about 1 cup)
1 red pepper
1 onion
6 eggs
1 envelope nonfat dry milk
3 tablespoons worchestershire sauce
2 tablespoons Old Bay
2 tablespoons olive oil

Recipe Directions for Turkey Meat Loaf

  1. Chop peppers and onions finely and saute in olive oil.

  2. Mix all other ingredients except the turkey and matzo with a blender or whisk.

  3. Stir egg mix into turkey and mix well with hands.

  4. Fold in vegetables and matzo and mix well.

  5. Place in loaf pans (2 medium or 1 small and 1 large) and bake at 350 F for 1 hr or until 160 F on meat thermometer.
