Recipe Ingredients for Turkey Manicotti

12 oz (Heartland) ground turkey
85 gram chopped onions
1 tsp garlic powder
1/2 tsp dried Italian seasoning
1/4 tsp black pepper
230 gram low-fat cottage cheese
240 gram nonfat yogurt
50 gram Parmesan cheese
4 oz baby spinach
1 egg
300 gram Manicotti Dry
200 gram cooked navy beans
26 oz (Hunt's) No sugar-added spaghetti sauce
6 oz Cheeses, Low Fat Mozzarella

Recipe Directions for Turkey Manicotti

  1. In a large saute pan, combine the turkey meat, onion, garlic powder, Italian seasoning, and pepper. Cook over medium-high heat until turkey is no longer pink, breaking up pieces halfway through cooking with a wooden spoon.

  2. In a large bowl, combine the cottage cheese, chopped baby spinach, Parmesan cheese, yogurt, egg, parsley, and turkey mixture.

  3. Preheat oven to 360F.

  4. Stuff uncooked Manicotti shells with the turkey mixture.

  5. In the bottom of an 9 x 13"-oven dish, spoon half of the spaghetti sauce over bottom.

  6. Layer Manicotti shells over sauce.

  7. To Manicotti shells with any of the remaining turkey mixture and spaghetti sauce.

  8. Sprinkle Mozzarella cheese on top.

  9. Cover pan with alu foil and place into preheated oven.

  10. Bake at 350F until shells are done, approximately 1 hr. Uncover pan and bake another 10 minutes or until cheese is melted and light golden browned.
