Recipe Ingredients for Turkey Lima Bean Potpie


Filling:
3 cups water
2 cups sliced mushrooms
3 cup frozen lima beans
1 tablespoons butter without salt
1/2 cup chopped potato
1/4 cup broth
2 tablespoons minced fresh sage
2 cups chopped onion
2 cups sliced turkey, oven roasted
1/2 cup chopped carrot

Dough:
1 1/4 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
2 tablespoons butter without salt
2 ounces extra-sharp Cheddar cheese, grated (about 1 1/2 cups)
1/2 cup skim milk
1/4 chopped scallions

Recipe Directions for Turkey Lima Bean Potpie

  1. Filling:

  2. Boil potatoes with salt in the water until close to done and add in lima beans. Continue boiling until lima beans are cooked. Pour out all but one cup of water. Transfer vegetables into bowl of ice water to stop cooking and set aside saved cup of water.

  3. In a large saucepan melt butter over medium heat. Add onions and mushrooms. Saute for about a minute with sage (to taste.) Add salt pepper, stock, reserved water and carrots.

  4. When carrots are done, drain the potatoes and lima beans from the ice water and add to the carrot mixture.

  5. Cook for another minute and then pour mixture into shallow baking pan.

  6. Crust:

  7. Mix together all of the ingredients listed for the dough, except the scallions. Spoon dough onto vegetable mixture in baking dish and bake at 425 for 25-30 minutes, until crust browns.

  8. Serve with chopped scallions sprinkled on top.
