This turkey stew is the result of my Thanksgiving leftovers. I used the turkey carcass with some carrots, onion, and celery seed to make the broth (use chicken broth if you don't have this), and some turkey meat that I had in the freezer. Change up the vegetables as you like. You can also use lentils instead of split peas. Also would work well as a slow-cooker recipe.

Recipe Ingredients for Turkey Leftovers Stew

1 lb dark meat turkey with skin
8 cups chicken broth
10 oz potato, diced
12 oz turnip, diced
127 grams frozen corn
113 grams frozen peas
75 grams carrots, sliced
50 grams onion, sliced
1 lb yellow split peas
1 tsp thyme
1 tsp black pepper
1 tsp curry powder

Recipe Directions for Turkey Leftovers Stew

  1. Bring the chicken broth to a boil.

  2. Add the vegetables and stir.

  3. Chop the turkey into 1" pieces.

  4. Add turkey to the stew.

  5. Add seasonings and split peas and stir.

  6. Boil for 10 minutes, then reduce to a simmer.

  7. Simmer for at least 30 minutes, but the longer the better, stirring occasionally to bring up split peas from the bottom.

  8. Ladle into bowls, cool for 5 minutes, and serve.
