My mom's recipe - but made lighter!

Recipe Ingredients for Turkey Lasagne, homemade

3 lb. lean ground turkey
1 lb. part skim mozzarella, grated
2 lb. part skim ricotta
2 eggs
1/2 cup grated parmesan cheese
12 ozs. tomato paste
3 lbs stewed tomatoes
2 green peppers, chopped
1 medium onion, chopped
12 oz. mushrooms, chopped
10 oz. lasagne, oven-ready
1/8 cup lemon juice
1 tsp. cinnamon

Recipe Directions for Turkey Lasagne, homemade

  1. Brown ground turkey in a large saucepan.

  2. Add tomato paste, stewed tomatoes, mushrooms, green peppers, onion, lemon juice, and cinnamon. Stir over medium heat, and bring to a simmer. Simmer over low heat for about 30-45 minutes.

  3. Meanwhile, grate the mozzarella (I use a food processor). Set aside.

  4. Combine ricotta, eggs, and parmesan in a food processor until blended. Set aside.

  5. Begin to layer lasagne in a large pan. Lay down a layer of noodles, then a layer of the ricotta mixture, and then a layer of sauce. Continue layering until the pan is full (the top layer should be noodles). Liberally sprinkle mozzarella over the top of the lasagne.

  6. Cover with foil and bake in a 350 degree oven for 1 hour minutes. Remove foil and bake for an additional 30 minutes or until top is golden and bubbly.
