Recipe Ingredients for Turkey Lasagna

2 tbsp light olive oil
1 onion
2 garlic cloves
1 lb turkey breast
1 cup mascarpone
2 tsp tarragon
300 g broccoli
120 g butter
120 g flour
5 cups milk
1 cup grated parmesan
115 g Regular Lasagna Sheets

Recipe Directions for Turkey Lasagna

  1. Preheat oven to 180 C. Heat the oil in a heavy based saucepan and cook the onion and garlic until softened but not colored. Remove the pan from the heat and stir in diced turkey, mascarpone and tarragon, with seasoning to taste.

  2. Blanch the broccoli in a large saucepan of salted boiling water for 1 minute, then drain and rinse thoroughly under cold water to prevent the broccoli from overcooking. Drain well and set aside.

  3. To make the sauce, melt the butter in the microwave until melted. Add the flour and stir to a thick consistency. Add small increments of milk while stirring until a thick mixture is made. Add the remaining milk. Microwave new mixture at 1 minute increments until thick, add half the parmesan cheese.

  4. Spoon a layer of the turkey mixture into a large, shallow baking dish. Add a layer of broccoli and cover with sheets of lasagna. Coat with cheese sauce. Repeat these layers, finishing with a layer of cheese sauce at the top. Sprinkle the remaining parmesan and bake for 35-40 minutes.
