Lasagna made with ground turkey, zucchini and ricotta - no pasta noodles

Recipe Ingredients for Turkey Lasagna

4 large zucchini
2 tbsp olive oil
5 cloves garlic
1 lb mushrooms
1 large onion
2 green peppers
1 1/2 lb ground turkey breast
1 lb spinach, chopped
475 g ricotta
2 eggs
16 oz tomato sauce
1/2 cup mozzarella
4 tbsp parmesan

Recipe Directions for Turkey Lasagna

  1. Wash zucchini and remove ends.

  2. Cut zucchini into thin diagonal slices.

  3. Brush lightly with oil.

  4. Grill slices 2 - 3 minutes until grill marks appear.

  5. Blend the mushrooms, onion, garlic and green pepper in food processor until finely chopped.

  6. Spoon mixture into large bowl.

  7. Add turkey, spinach, ricotta and eggs.

  8. Stir until well combined.

  9. Oil 9 x 13 baking pan.

  10. Cover bottom with half the zucchini.

  11. Layer half the mixture on top of slices.

  12. Repeat the two layers.

  13. Pour the tomato sauce evenly over the layered mixture.

  14. Sprinkle with mozzarella and parmesan.

  15. Bake at 350 degrees for 1 hour.
