This is great served over toast or over rice. This dish can be altered to make chicken or salmon a la king. Just substitute the turkey with 2 cups of diced cooked chicken or 2 cups of boned or canned red salmon

Recipe Ingredients for Turkey a la King

2 tablespoons butter
1 green pepper, minced
1 cup sliced mushrooms
2 tablespoons flour
1 cup chicken stock
2 cups cooked turkey, diced
1 cup sour cream or cream substitute
2 egg yolks
1 red bell pepper, diced
1 dash salt
1 dash pepper
1 ounce Sherry

Recipe Directions for Turkey a la King

  1. Melt butter, add green pepper and mushrooms and sauté until tender. Lift out.

  2. Add flour to margarine,

  3. Add stock and cook until thickened.

  4. Add turkey, cooked pepper and mushrooms and heat thoroughly.

  5. Remove from heat and add cream mixed with beaten egg yolks and remaining ingredients.

  6. Serve at once over rice

  7. place over hot, not boiling water to keep warm. Do not boil after adding egg yolks
