I got the recipe from Ina Garten of the Food Network. Serves 4 as a main dish, maybe 6 or more if a side dish.

Recipe Ingredients for Turkey Hashed Browns

8 oz turkey breast
22 1/2 oz potato
7 9/10 oz onion
1 1/5 oz scallion
7/20 oz parsley
5 tbsp margarine
1 tbsp salt
2 tsp pepper

Recipe Directions for Turkey Hashed Browns

  1. Cook the turkey.

  2. Chop the potatos into half-inch cubes. Chop the onions, scallions and parsley too.

  3. Melt the butter in a large (10 to 12-inch) saute pan. Add the potatoes, onions, salt, and pepper and cook over medium-low heat for 15 to 20 minutes, turning occasionally with a flat spatula, until the potatoes are evenly browned and cooked through. (Allow the potatoes to cook for 5 minutes before turning.)

  4. Add the cooked turkey and heat for 1 to 2 minutes. Turn off the heat and add the parsley and scallions. Serve hot.
