One serving for a hearty dinner. Two servings for lunch entrée.

Recipe Ingredients for Turkey-fried rice

5 oz turkey cutlet
64 g celery
1 medium onion
1 cup water chestnut
1 egg
1 cup mushrooms
1 medium onion
1 1/2 cups rice
2 servings oyster-flavored sauce

Recipe Directions for Turkey-fried rice

  1. Partially freeze and thinly slice turkey cutlet. It is preferable that the rice be refrigerated left-over; but fresh may be used. (Refrigerating the rice for a day tempers it so that it does not partially dissolve during the stir-fry process.) Roughly dice onion and celery and slice mushrooms. Rinse the canned water chestnuts.

  2. Generously spray a non-stick pan with cooking spray or heat a tablespoon of oil and add it to the calorie count for the dish. Beat the egg with a fork

  3. Stir-fry the turkey over high heat (reducing the heat if the dish begins to smoke). Add the vegetables to the pan all at one and stir-fry until the mushrooms have been softened and the other vegetables are tender-crisp. Add the rice without stiring and pour in the beaten egg. Cover the pan and allow the egg to set for two minutes over medium heat.

  4. Add the oyster-flavored sauce to the pan and again stir-fry the dish for two or three minutes.
