Turkey Feta and Sundried Tomato Mini Meatloaf Recipe

Healthy individual serving meatloafs that can be made with all ground turkey or half with extra lean ground beef (otherwise they look white!). Easy to freeze!

Recipe Ingredients for Turkey feta and sundried tomato mini meatloaf

1/2 cup plain bread crumbs
1/3 cup chopped fresh flat-leaf parsley
1/4 cup chopped sun-dried tomatoes
2 cloves garlic, minced,
2 eggs, at room temperature, lightly beaten
2 tablespoons skim milk
90 g Cheese
1 teaspoons kosher salt
1 teaspoon freshly ground black pepper
1 pound lean ground turkey
1 pound extra lean ground beef

Recipe Directions for Turkey feta and sundried tomato mini meatloaf

  1. Directions

  2. Place an oven rack in the center of the oven. Preheat the oven to 375 degrees F.

  3. Spray a cupcake pan with cooking spray.

  4. In a large bowl, stir together the bread crumbs, parsley, sun-dried tomatoes, garlic, if using, eggs, milk, feta, salt, and pepper. Add the turkey and gently stir to combine, being careful not to overwork the meat.

  5. Carefully pack the meat mixture into the prepared pan and bake until the internal temperature registers 165 degrees F on an instant-read thermometer, about 45 minutes. Remove from the oven and let rest for 5 minutes. Put on a plate and serve.

  6. FUN EXTRA: cook sweet potato and blend. Put in sandwich baggie and cut out a corner. Place on top of meatloaf like you would icing on a cupcake. Sprinkle with parmesan and broil until light brown!
