600 g turkey breast meat, in escalope
2 tbsp flour
2 tbsp extra-virgin olive oil
50 g sherry
3/4 cup low sodium chicken broth
3 tbsp lemon juice
2 tbsp capers, rinsed
1/4 cup parsley, chopped

  1. let the capers in water for half an hour, rinse them.

  4. reserve the escalopes

  5. add sherry and chicken broth.

  6. let broth and sherry reduce to half

  7. add lemon juice and capers and parlsey

  8. add turkey escalopes to reheat them in sauce.

  9. serve as is or on rice with green vegetables.
