Turkey Enchilladas Recipe

Great dinner...use low-fat sour cream and low-fat cheese. Program doesn't recognize difference. There would be a lower calorie count with these.

Recipe Ingredients for Turkey Enchilladas

1 pound ground turkey
15 ounces black beans
15 ounces tomatoes
2 tbsp chili powder
1/2 cup sour cream
3/4 cup cheese
8 tortillas

Recipe Directions for Turkey Enchilladas

  1. Preheat oven to 350 degrees. Wrap the tortillas in foil and let them warm-up while you're making the filling.

  2. Brown the turkey in a skillet. When browned, add the chilli powder and cook for a few seconds. Add the beans (drained and rinsed) and the tomatoes with their juice. If it seems a little dry, add up to a half cup of water.

  3. Spray a 13 x 9 pan with non-stick cooking spray. Lay a tortilla out, put a tbsp of sour cream down and 1/2 cup of the turkey mixture. Roll this up and put it seam side down in the dish. Continue in the fashion until you've used all the tortillas. If any meat mixture is left over, pour it over the top of the enchilladas and add the cheese.

  4. Place in the oven for 10 minutes -- you're just heating this through and melting the cheese. Serve.
