Recipe Ingredients for Turkey enchiladas.

1 lb ground turkey
2 cups black beans
1 oz greek yogurt
1 Onion Yellow
1 tablespoon cumin
1 teaspoon salt
1 teaspoon pepper
2 tablespoons olive oil
2 cups spinach
10 Whole Wheat Tortillas
1 cup low fat cheddar cheese

Recipe Directions for Turkey enchiladas.

  1. Pre heat oven to 400.

  2. Sautee onions in olive oil for 2 to 3 minutes. Add Turkey, Cumin, Salt, Pepper. Break up Turkey meat and sautee over medium heat. Approx 8 to 10 minutes. Add Spinach. When all is willted add black beans. Immediately turn off the heat and mash black beans as you mix in. Add Greek Yogurt. You do not have to add the entire ammount. Add to conistency desired. Wrap meat in tortillas and place in non stick baking sheet. top each with cheese and bake until crisp and brown.

  3. This is an altered Giada de Laurentis recipe.
