Turkey Enchilada Recipe

Turkey enchiladas. Probably used less sauce than called for.

Recipe Ingredients for Turkey Enchilada

1 1/2 cups turkey, diced
1 cup yogurt
1 cup onions
19 oz enchilada sauce
1 1/2 tbs oil
6 tortillas
6 oz Monterey jack cheese
1 cup cilantro, diced

Recipe Directions for Turkey Enchilada

  1. Mix turkey, half the cilantro, half the onions, 2/3 cheese and yogurt together. Set aside.

  2. In a pan heat oil, then cook onions until soft.

  3. Add enchilada sauce and simmer for 10 minutes. Then, add the other half of cilantro.

  4. Layer the sauce in the bottom of a baking dish.

  5. Heat the tortillas until they are pliable. Scoop 1/6 of the turkey mixture into the center of the tortilla. Wrap the filling into the tortilla and place in the dish.

  6. Cover with the remaining sauce and then cheese. Cover and bake for 30 minutes, 350 degrees.
