Recipe Ingredients for Turkey Eggplant Casserole

24 oz Ground Turkey
1 medium Green Bell Pepper
1 medium (approx 2-3/4" long, 2-1/2" dia) Peppers, Sweet, Red
1 eggplant, unpeeled (approx 1-1/4 lb) Eggplant
28 oz Crushed Tomatoes
0.75 cup Bread Crumbs Italian Style
1 medium (2-1/2" dia) Onions
3 clove Garlic
1 oz Fancy Parmesan Shredded Cheese
0.5 tsp Oregano
0.5 tsp, ground Basil, Dried
0.5 tsp Sea Salt
1/4 tsp Spices Ground Black Pepper

Recipe Directions for Turkey Eggplant Casserole

Dice one large eggplant, leave skin on. In a large non-stick pot, brown the ground turkey, diced onions and garlic. Add cubed eggplant, cook over medium heat for 5 min. Dice the bell peppers and add to the pot. Drain the mushrooms and add to pot. Stir occasionally for 2 min. Add the crushed tomatoes and cook for another 5 min. The eggplant needs to be well cooked before it goes in the over or it will be tough and chewy. Stir in the bread crumbs. Grease a 9x13 pan and pour the contents of the pot into the pan. Bake on 350f for 30 minutes (covered in foil) Removed the foil and top with Parmesan cheese/ Bake for another 15 min, uncovered. Rest 10 min before serving.
