Recipe Ingredients for Turkey eggplant casserole

1 lb fresh ground turkey breast
28 oz marinara sauce
8 oz part-skim mozzarella cheese
1 eggplant
1 clove garlic

Recipe Directions for Turkey eggplant casserole

  1. Preheat oven to 375 degrees.

  2. Slice eggplant crosswise, very thin.

  3. Spread a little sauce in the bottom of an 8x8 baking dish. Layer 1/2 each of eggplant, ground turkey, sauce and cheese, and layer again. Cover with foil and bake covered for 45 min. Uncover and bake for 20 min.
