Cooked ground turkey with cubed eggplant, green pepper, onions, crushed tomatoes and breadcrumbs formed into a loaf in a 13x9 in pan.

Recipe Ingredients for Turkey Eggplant Cassarole

1 tomatoes
1 eggplant
1 pound ground turkey
1 green pepper
1 onion
1/3 cup parmesan cheese
1/3 cup bread crumbs
1 cooking spray

Recipe Directions for Turkey Eggplant Cassarole

  1. brown ground turkey

  2. peel and cube eggplant

  3. dice green pepper and onion and saute lightly

  4. combine turkey, eggplant, pepper, onion and 1 can crushed tomatoes. Simmer over low heat. Add 1/3 cup bread crumbs, bring to boil stirring to prevent burning. Turn into 9x13 pan and bake at 350 for 45 minutes.
