Recipe Ingredients for Turkey Cutlets a la Grecque

6 dried tomatoes (packed without oil)
3/4 cup boiled water
1 1/2 pound turkey cutlets
3/4 teaspoon pepper
1/4 teaspoon salt
3/4 cup dry white wine
3/4 cup no-salt-added chicken broth
1 tablespoon cornstarch
1 teaspoon cornstarch
2 tablespoons sliced ripe olives
1/4 teaspoon dried oregano

Recipe Directions for Turkey Cutlets a la Grecque

  1. Combine tomato and boiling water in a small bowl. Let stand 10 minutes. Drain, cut tomato into thin slices, and set aside.

  2. Sprinkle turkey breast cutlets with pepper and salt. Coat a nonstick skillet with cooking spray. Place over medium-high heat until hot. Add half of cutlets; cook 3 minutes on each side or until done.

  3. Transfer to a platter and keep warm. Repeat procedure with remaining cutlets.

  4. Combine wine, chicken broth, and cornstarch in a small bowl, stirring until smooth. Add reserved tomato slices, olives, and oregano.

  5. Pour wine mixture into skillet. Bring to a boil. Cook, stirring constantly, 1 minute or until wine mixture is thickened and bubbly. Pour wine mixture over turkey.
