This recipe is a staple in our household in the days after Thanksgiving (leftover turkey). We always have to double the recipe because it never lasts!!! The original recipe uses half-and-half instead of milk.

Recipe Ingredients for Turkey Curry Soup

1 onion
2 t oil
3 T flour
1 t curry powder
3 c turkey broth
1 c potatoes, diced
1/2 c carrots, diced
1/2 c celery, diced
1 T dried parsley
3/4 t dried sage or 0.25 t ground sage
2 c cooked turkey, cubed
1 1/2 c skim milk
10 oz frozen spinach
1/4 t pepper

Recipe Directions for Turkey Curry Soup

  1. Fry onion in oil in the bottom of a large pot.

  2. Add flour and curry powder. Mix to coat onion.

  3. Add broth.

  4. Add potatoes, carrots, celery, parsley, and sage to pot. Bring to a boil. Simmer with cover for 12 minutes.

  5. Add turkey, milk, spinach, and pepper.

  6. Makes 4-6 servings.
