Turkey Chili Soup Recipe

Haven't tried this one yet, but I took a recipe and changed the ingredients to suit me and plan to try soon.

Recipe Ingredients for Turkey Chili Soup

3 teaspoons olive oil
1 1/2 cups chopped onion
2 leek
8 ounces chopped green chilies
4 tsp chicken boullion, dry
7 1/2 cups water
1 lb ground turkey
1 cup evaporated skim milk
1/2 cup cooked brown rice

Recipe Directions for Turkey Chili Soup

  1. Heat water and chicken boullion to make chicken broth.

  2. Slice leeks in half lengthwise. Wash very well to remove any grit.

  3. Chop leeks and onion.

  4. Heat oil in a large pot.

  5. Add chopped onion and leeks. Saute until tender.

  6. Add the chopped green chilies and stir.

  7. Add 1/2 the chicken broth.

  8. Bring to a boil, reduce heat and simmer for about 10 minutes.

  9. Remove from heat, cool slightly.

  10. Place in blender and puree until smooth. You might need to do this in batches. Careful! Hot liquids will expand quite a bit in the blender.

  11. Put pureed mixture back in the soup pot, combine with other chicken stock and keep warm on low, .

  12. In a large skillet, saute ground turkey until cooked, spice as wanted.

  13. Add into the soup pot. Add the evaporated milk and stir. Add rice and stir (do not add rice if freezing).

  14. Salt and pepper to taste. Heat through.

  15. Serve immediately or freeze.

  16. To freeze: Cool to room temperature. Flash Freeze this in quart sized freezer bags. Lay them on a baking sheet until solid. Put rice in separate bag, place both bags in gallon bag and label.

  17. To serve: Warm in the microwave or on stovetop until hot. Heat rice and add to soup.
