I soak the beans (1/2 cup kidney or try pinot) and 1 1/2 cups black beans overnight and cook with a little onion instead of the canned versions...

Recipe Ingredients for Turkey Chili

3 cups chopped yellow onions
1 lbs lean ground turkey or lean turkey sausage
3 cups diced tomatoes or 1 can (28 ounces) not drained, diced
15 oz kidney beans, drained and rinsed
15 oz black beans, drained and rinsed
1 cup chicken broth, fat free, low sodium
8 cloves chopped garlic
1 tablespoons chili powder
2 tablespoons oregano (chopped fresh or dried)
1 teaspoon ground cumin
1 teaspoon mustard powder

Recipe Directions for Turkey Chili

  1. Coat a large saucepan or Dutch oven with olive oil spray.

  2. Add onions and cook soft and starting to brown.

  3. Add ground turkey and cooks until no longer pink.

  4. Add everything and bring to boil over high heat, reduce to low and simmer 20 mins.

  5. Garnish:

  6. cup sliced black olives

  7. cup chopped scallions or chopped fresh cilantro
