A hearty yet healthful alternative to heavy, calorie-rich chili con carne

Recipe Ingredients for Turkey Chili

1 3/10 lbs turkey, ground
1 large onion, chopped
1 large sweet red pepper, chopped
1 large sweet green pepper, chopped
1 tbsp garlic, chopped
4 cups tomatoes, diced
12 oz dried black beans
4 cups chicken stock
1/2 cup chili powder
2 tbsp cumin
1 tbsp oregano
1 tsp salt
1/2 tsp black pepper

Recipe Directions for Turkey Chili

  1. Sautee onions, peppers, garlic and ground turkey (7% fat) in the olive oil until vegetables are tender. Add tomatoes, chili powder, oregano, cumin and pepper. Simmer over low heat for about 1 hour.

  2. At the same time, cook the black beans in the chicken stock.

  3. When beans are done, add them to the chili mixture. Adjust seasonings to taste.
