Ground turkey chili with Garbanzo Red Kidney, and Black Beans plus Corn. Substitute diced roasted turkey for the ground turkey if you wish.

Recipe Ingredients for Turkey Chili with 3 Beans and Corn

672 grams Ground Turkey Breast, 99% Fat-free
2 tbsp Olive Oil
1 cup Corn, Sweet, Yellow
15.5 oz Black Beans
15.5 oz Garbanzo Beans
15.5 oz Kidney Beans Dark Red
12 oz V8 100% Vegetable Juice
6 tsp Cumin
16 ounces Fresh Chopped Onions
1 medium Red Hothouse Bell Pepper
1 tbsp Chipotle Peppers
5 cloves, raw Garlic
1 tsp Oregano
0.5 tsp Cinnamon, Ground
2 tbsp Chili Powder
0.25 tsp Pepper, Red Or Cayenne

Recipe Directions for Turkey Chili with 3 Beans and Corn

  1. Hot Sauce, to taste

  2. Reduced-fat Sour Cream and shredded Cheese (optional garnish)

  3. Heat oil in large, deep pot over medium-high heat until hot. Stir in onion, chipotle in adobe sauce, garlic & bell pepper. Lightly sauté until onion is translucent, garlic is golden and bell pepper is softened. Stir in chili powder, cayenne, cumin, oregano and cinnamon and cook, stirring, for 30 seconds. Stir in beans, corn, tomatoes and juice.

  4. Reduce heat to medium-low and simmer gently 45 minutes, stirring occasionally. Season to taste with salt and pepper.

  5. Stir in turkey; simmer an additional 15 minutes. Adjust seasonings, as desired, adding more salt, pepper and hot sauce.

  6. Serve accompanied by reduced-fat sour cream and cheese as toppings, to taste.
