Chili w/turkey or chicken, vegetables, and macaroni. Low in sodium and trans fat - high in vitamins and good fiber source.

Recipe Ingredients for Turkey (or Chicken) Vegetable Chili

3/4 pound ground turkey or chicken
1/2 cups chopped onion
124 g (1 cup) zucchini squash, cubed
1 cup chopped carrots
2 cloves garlic, minced (about 1 Tbl)
15 oz black beans, rinsed & drained
14 1/2 oz stewed tomatoes
8 oz tomato juice
1 cup frozen whole kernel corn
2 1/2 g Mexican or taco seasoning
56 g elbow macaroni

Recipe Directions for Turkey (or Chicken) Vegetable Chili

  1. Cook macaroni al dente', according to package directions, omitting salt. Set aside

  2. Spray non-stick skillet with non-stick cooking spray. Heat over medium until hot. Add sausage, zucchini, carrots and garlic. Cook until tender, stirring occasionally.

  3. Add all remaining ingredients, including cooked macaroni. Stir until well-blended. Bring to boil, reduce heat and simmer until heated through and flavors coalese. Serve.
