A great idea for leftover cooked turkey or chicken. Tons of flavor and fiber!! Serve to family and friends without them knowing it's good for them!! NOTE: Calorie count is done using turkey.

Recipe Ingredients for Turkey/Chicken Enchiladas

1/2 onion
2 tbsp vegetable oil
10 oz can black beans, drained and rinsed
10 oz can corn, drained
16 oz turkey or chicken, cooked
2 cans cream of chicken soup
16 oz salsa, medium
8 low-carb flour tortillas
20 oz enchilada sauce
1 cup cheddar cheese

Recipe Directions for Turkey/Chicken Enchiladas

  1. Preheat oven to 375.

  2. Chop onion and saute in oil over medium heat in medium-sized sauce pan until translucent, about 5 minutes.

  3. Add black beans, corn, turkey/chicken, soup, and salsa, stirring well after adding each ingredient.

  4. Cook until heated through, 5-6 minutes, then remove from heat.

  5. Using a large pan (at least 9x13), spray sides and bottom liberally with cooking spray.

  6. Spread 1/3 can of enchilada sauce along the bottom of the pan.

  7. Take one tortilla and fill in the center with 1/8 of the mixture.

  8. Fold sides of tortilla over the mixture and place in the pan with the sealed side down (so mixture doesn't spill out).

  9. Continue with remaining tortillas.

  10. Pour remaining enchilada sauce evenly over the top of the tortillas.

  11. Bake for 20 minutes.

  12. Remove from oven and evenly spread cheese over the top of the enchiladas.

  13. Bake for 10 minutes more, or until cheese is melted and begins to brown.

  14. Remove from oven and let sit on stove for at least 10 minutes so the filling has time to "set" before serving.
