A turkey casserole for a day when you need some comfort food. I always prefer making recipes from scratch, which helps to ensure you know what's going into your body.

Recipe Ingredients for Turkey Casserole

4 tbsp Butter
1/4 cup Flour, All Purpose
1 medium raw Onion Red
2 cup, chopped Broccoli
1 cup, chopped Peppers, Sweet, Red
1 cup Milk, Nonfat, Fluid
0.5 cup Soup, chicken broth, canned, less/reduced sodium
2 wedge Light Original Swiss Spreadable Cheese Wedges
3 medium (2-1/4" to 3-1/4" dia.) Potatoes, Boiled
2 cup, chopped or diced Turkey, All Classes, Meat Only
0.5 cup, shredded Cheddar Cheese

Recipe Directions for Turkey Casserole

  1. Melt butter over medium heat, then add flour, stirring constantly. Add milk and chicken broth, continuing to stir. Reduce heat to low, stirring occasionally. Gradually add laughing cow cheese wedges, stirring constantly.

  2. Meanwhile, chop potatoes into thin slices and arrange in a casserole dish. Layer the broccoli, red pepper, cooked turkey, and onion on top of the potatoes.

  3. Pour the white sauce on top of the casserole. Bake at 350 F for 40 minutes. Remove from oven, and spread shredded cheese on top. Return to oven for another 10 minutes to melt cheese.
