Turkey Cassarole Recipe

Using leftovers from thanksgiving

Recipe Ingredients for Turkey Cassarole

2 T olive oil
2 c Fresh mushrooms, sliced
1/2 onion
1 T lemon juice
4 T flour
2 c chicken broth
1 c skim milk
2 t dry parsley
1 t salt
1/2 tsp nutmeg
1 pinch paprika
1 pinch black pepper
2 c thin egg noodles
280 g (2 c) turkey breast, cooked
1/4 c Grated parmesan cheese

Recipe Directions for Turkey Cassarole

  1. Preheat oven to 350 degrees.

  2. Saute mushrooms and onion in 1 T olive oil for 5 min. Sprinkle with lemon juice.

  3. Blend 1 T olive oil with flour until smooth. Add broth and milk, stirring briskly to remove any lumps.

  4. Bring to a boil; add seasonings. Continue cooking 2 to 3 minutes until thickened.

  5. Cook egg noodles according to package directions. Drain.

  6. Pour enough sauce into a lightly greased 10 cup casserole to coat the bottom.

  7. Layer mushrooms/onions, noodles and turkey over sauce. Pour remainder of

  8. sauce over turkey.

  9. Sprinkle with parmesan cheese. Bake at 350 F for 30 to 40 min or until mixture bubbles.
