Recipe Ingredients for Turkey Carcass Soup

2 tablespoons onions, minced
1 clove garlic, minced
1 tablespoon oil
1 cup carrots, diced
1/2 cup celery, diced
1/2 cup mushrooms, chopped
1 1/2 tablespoon flour
6 cups chicken stock, low-sodium
1 teaspoon marjoram
1/3 cup barley, raw
1 cup turkey meat, cooked and diced
2 tablespoons fresh parsley, chopped

Recipe Directions for Turkey Carcass Soup

  1. In a large saucepan, saute the onion and garlic in oil until they are soft.

  2. Add the carrots, celery, and mushrooms and cook the vegetables, stirring them, 3-5 minutes longer.

  3. Add the flour, and cook the mixture, stirring, for another minute.

  4. Add the stock, marjoram, and barley. Bring the soup to a boil, reduce the heat, partially cover the pan and simmer the soup for at least 30 minutes until the barley is cooked.

  5. Add the turkey meat and heat to boiling.

  6. Sprinkle the soup with parsley just before serving.
