Recipe Ingredients for Turkey Burgers with Dijon Mustard

1 pounds ground turkey, (90 percent lean)
4 oz goat cheese, sliced 1/8-inch thick
1/8 cup Dijon mustard
1/2 tablespoon honey
1/4 teaspoon lemon zest
1/2 tablespoon fresh orange juice
1/2 teaspoon lemon juice, from Meyer lemons, if possible
1 Salt
1 ground black pepper

Recipe Directions for Turkey Burgers with Dijon Mustard

  1. Mustard:

  2. Whisk together all ingredients, in a small bowl. Cover and refrigerate for at least 30 minutes and up to 24 hours to allow flavors to meld.

  3. Burgers:

  4. Preheat the grill to high. Form the meat into 4oz burgers. Season the burgers on both sides with salt and pepper, to taste. Grill until cooked through, about 3 to 4 minutes on each side. During the last minutes of cooking add 1 oz of cheese to each burger, cover the grill and let the cheese soften slightly, approximately 1 minute. Put the burgers on the buns, drizzle with some of the mustard
