Use roasted shredded turkey breast instead of chicken.

Recipe Ingredients for Turkey Brocoli Salad

2 tablespoons olive oil
2 teaspoons sugar
12 ounce shredded broccoli
1 lb chicken breast
1 1/2 cups grapes, halved
1 cup carrot, shredded
1/4 cup unsalted almonds, sliced
1/8 teaspoon black pepper
1/3 cup balsamic vinegar

Recipe Directions for Turkey Brocoli Salad

  1. For vinagrette: In a screw-top jar, combine vinegar, oil, sugar, and salt. Cover and shake well.

  2. In a very large bowl, combine shredded broccoli, turkey, grapes, and carrot. Add dressing; toss to coat. Serve immediately or cover and chill for up to 24 hours. Sprinkle with almonds and pepper just before serving.
