Turkey Bolognese, pressure cooker with bones

Recipe Ingredients for Turkey Bolognese

16 oz Ground Turkey, 85% Lean
2 cup, chopped Onions
1 cup, chopped Carrots
1 cup, diced Celery
8 oz Wine
1 cup Milk, Nonfat, Fluid
32 oz San Marzano Passata Tomatoes
3 cloves Garlic
0.5 tsp, crumbled Bay Leaf
1 tbsp Extra Virgin Olive Oil
8 oz Tomato Paste

Recipe Directions for Turkey Bolognese

  1. In Pressure cooker sautee in olive oil; 2 cups onion, 1 cup celery, 1 cup carrot, 3 garlic cloves minced.

  2. Add turkey and brown

  3. add wine, cook till evaporated

  4. add milk cook till evaporated

  5. add tomatoes, and tomato paste

  6. add 1 tukey neck wrapped in cheese cloth

  7. add bay leaf, salt pepper and 1 clove

  8. cook under high pressure for 1 hour

  9. release pressure

  10. and cook uncovered till reduced to desired consistency

  11. tast and correct seasoing
