Quick & easy one-dish dinner great for weeknights or Sunday afternoons. Can be customized to include additional/less veggies. May need more salt to taste.

Recipe Ingredients for Turkey Black Bean Pumpkin Chili

20 oz 15% fat ground turkey
1 cup chopped onion
4 tsp chopped garlic
1 tbsp olive oil
2 tbsp chili powder
1/2 tsp salt
1 1/2 tsp crushed red pepper
1 tsp cumin
14 1/2 oz can stewed tomatoes, no salt added
14 1/2 oz can diced tomatoes, no salt added
16 oz can Black Beans, no salt added
15 oz Garbanzo Beans Canned
10 oz green pepper
12 oz frozen corn
3 cup Cooked, Boiled, Drained, Without Salt pumpkin
2 cups water
1 tbsp lemon juice

Recipe Directions for Turkey Black Bean Pumpkin Chili

  1. Heat oil in dutch oven over medium high heat; add turkey, chopped onion & garlic. Cook, stirring to break up the turkey for 5-7 minutes, or until turkey is no longer pink.

  2. Add seasonings, stir & cook for another 2 minutes.

  3. Add chilies, tomatoes, beans, corn, pumpkin & chopped green pepper & stir.

  4. Heat to boiling, stirring often.

  5. Reduce heat to low & simmer, stirring occasionally for 30 minutes.

  6. Add up to 2 cups water as needed for consistency.

  7. Stir in lime juice & remove from heat.

  8. Serve topped with chopped green onions & cheddar cheese.
