This chili is easy to make. It can be kept in a slow cooker throughout the day for a thicker chili or eaten within 1 hour of cooking on the stove. It's great served with toppings such as chopped onions, avocado, cheese and lite sour cream. I often freeze half of it and then later serve it over rice as another meal.

Recipe Ingredients for Turkey, black bean and corn chili

1 c onion, diced
1 T garlic, diced
1 T olive oil
1 1/4 lb ground turkey, browned
30 oz black beans
30 oz corn
30 oz tomatoes, stewed and diced
4 oz jalapenos, sliced
1 T lime juice
2 c vegetable broth
1 T cumin, ground
1 T chili powder, ground
1 T salt
1 t hot sauce

Recipe Directions for Turkey, black bean and corn chili

In a large pot, brown onions and garlic in olive oil. Add ground turkey and brown. Add remaining ingredients. Bring to boil. Reduce heat and simmer for 1 hour on stove or transfer to crock pot and keep warm/low for several hours.
