Serving size is 1 cup. Fresh tomatoes, dried beans, and unsalted broth lower the salt content of this chili. For better salt profile, boil corn cobs and cut off your own fresh kernels. (I didn't have time for this batch.) My family always serves this kind of chili with corn bread crumbled on top.

Recipe Ingredients for Turkey and Black Bean Chili - 12/1/2010 Batch

1 1/5 lbs turkey breast, ground
16 oz dried black beans
6 large tomatoes, diced
1 can corn (drained)
1/4 cup chili powder
1 large white onion, diced
1 tsp cane sugar
1 tsp salt
1/2 tsp black pepper
2 tsp cumin
1 1/2 tsp garlic powder
4 servings (32 oz total) unsalted vegetable broth

Recipe Directions for Turkey and Black Bean Chili - 12/1/2010 Batch

  1. Add dried black beans to a large stock pot of water and bring to a boil. Boil for two minutes and then let soak for two hours before cooking.

  2. Rinse beans and add to the stock pot with fresh water. Simmer until tender. While this is cooking, skip to next step.

  3. Cook ground turkey breast until brown, then add to the crock pot with unsalted vegetable broth and turn on low.

  4. Dice 6 large tomatoes and 1 large onion, then add to the crock pot.

  5. Drain the can of corn and add to the crock pot.

  6. Measure out spices and add to the crock pot. Stir until mixed. The only thing that should NOT be in the crock pot now are the black beans.

  7. When the black beans are as tender as you like, drain and rinse. Do not add to the crock pot until they are as tender as you want them to be because they will not continue to soften once added to the crock pot.

  8. Cook on high or low depending on how much time until serving.
