Recipe Ingredients for Turkey Barley Veggie Soup

16 oz Ground Turkey
0.5 cup, sliced Onions
0.5 serving Garlic Cloves
5 cup Beef Broth
1 cup Barley, Pearled, Cooked
10 oz Mild Diced Tomatoes and Green Chilies
12 oz Steamfresh Mixed Vegetables
1 tsp Salt, Table
1 tsp Pepper, Black
1 tbsp Olive Oil
1 tbsp, ground Basil, Dried
1 tsp, crumbled Bay Leaf
0.5 cup, diced Celery
0.5 cup, chopped Carrots

Recipe Directions for Turkey Barley Veggie Soup

Heat olive oil in a dutch oven over medium heat. Dice onion, garlic, carrots, and celery. Add all to olive oil along with a pinch of salt and pepper and cook until onion is translucent. Add turkey, another pinch of salt and pepper, and cook until brown. Add undrained tomatoes. Slowly add beef broth, scraping up brown bits from the bottom of the pan. Add all remaining ingredients, cover, and bring to a boil. Let boil for two to four minutes, then reduce heat to a simmer and cook for an hour, covered.
