Recipe Ingredients for Turkey Bacon, Mushroom and Onion pancakes with Blueberry Syrup

1 serving Buttermilk Complete Pancake Mix
2 serving Turkey Bacon
0.25 small Onions
1/2 cup pieces Mushrooms
0.33 cup Blueberries
2.7 tsp Sugars, Granulated
0.22 cup Orange Juice
0.33 tbsp Corn Starch

Recipe Directions for Turkey Bacon, Mushroom and Onion pancakes with Blueberry Syrup

  1. Saute chopped mushrooms and onions with turkey bacon in same pan until bacon is cooked to your liking. Crumble bacon. Add veggies and bacon to prepared pancake batter (I use 1/2 cup of Krusteaz with a little over 1/3 cup water. Makes 2 pancakes.)

  2. For fresh blueberry syrup:

  3. Ingredients:

  4. 1/2 cup fresh or frozen blueberries

  5. 1 tablespoon water

  6. 1/4 cup orange juice

  7. 3 tablespoons SPLENDAŽ No Calorie

  8. Sweetener, Granulated

  9. 1 tablespoon cold water

  10. 2-1/4 teaspoons cornstarch

  11. 1/8 teaspoon almond extract

  12. 1/8 teaspoon ground cinnamon

  13. Directions:

  14. You have scaled this recipe's ingredients to yield a new amount (2). The directions below still refer to the original recipe yield (8).

  15. 1. In a saucepan over medium heat, combine the blueberries, 1/4 cup of water, orange juice, and SPLENDAŽ Granulated Sweetener. Stir gently, and bring to a boil.

  16. 2. In a cup or small bowl, mix together the cornstarch and 1/4 cup cold water. Gently stir the cornstarch mixture into the blueberries so as not to mash the berries. Simmer gently until thick enough to coat the back of a metal spoon, 3 to 4 minutes. Remove from heat and stir in the almond extract and cinnamon. Thin sauce with water if it is too thick for your liking.
