Recipe Ingredients for Tunisian Chicken and Almond Couscous

6 tbs almonds, sliced
7 tbs olive oil
24 oz chicken breasts, meat only
1 red bell pepper, red, julienned
1 green bell pepper, red, julienned
2 scallions, thinly sliced
4 cloves garlic, finely chopped
2 tsp cumin
2 tsp paprika
2 tsp salt, sea
1 1/2 tsp black pepper
1 tsp cinnamon
2 cups couscous
4 cups chicken stock
2 tbsp lemon juice
4 tbsp parsley, flat-leaf, chopped

Recipe Directions for Tunisian Chicken and Almond Couscous

  1. Toast the almonds over medium heat for 1 minute, set aside.

  2. Heat 4 tablespoons of the oil and cook the chicken for about 2 minutes. Add the bell peppers and cook for 4 minutes. Add the scallions, garlic, cumin, paprika, salt, pepper, and cinnamon; cook for another minute.

  3. Add the couscous and stock, bring to a boil, cover, and remove from the heat. Allow to stand for 5 minutes so the couscous absorbs the stock. Fluff up with a fork; stir in the lemon juice, parsley, reserved olive oil, and almonds. Top with plain yogurt if desired.
