Tuna w/ White Bean-Tomato Tuscan salad

Recipe Ingredients for Tuna w/ White Bean-Tomato Tuscan salad

12 oz tuna steak
2 tbs olive oil,divided
16 oz white beans
1 tsp rosemary
12 cherry tomatoes,sliced in 1/2
1 medium tomato
2 tbs shallots, chopped fine
1/4 c. chicken stock

Recipe Directions for Tuna w/ White Bean-Tomato Tuscan salad

  1. Marinate steaks in lime juice and small amount of olive oil for no more than 30 minutes.

  2. Sear steaks on each side for 2 minutes in a hot, but not smoking pan.

  3. In a med-skillet cook the shallots, add beans, stock, rosemary and gently cook for 7-8 minutes on low.

  4. Gently fold in sliced cherry tomatoes, taking care not to break them.

  5. To serve slice the tomato and place 3 slices on each plate and top with the bean mixture.

  6. Place the fish next to the salad on the plate.
