Spicy tuna topper for potatoes, rice, pasta, or whatever else you like.

Recipe Ingredients for Tuna Topper 2

2 teaspoons butter, melted `
1 tablespoon flour
4/5 cup skim milk
1/2 teaspoon prepared mustard
2 serrano peppers
1 can (6-oz.) tuna, drained and flaked
2 tablespoons chopped black olives
3 cloves garlic, crushed

Recipe Directions for Tuna Topper 2

  1. Preheat oven to 400F. Wrap potatoes in aluminum foil for softer skins, or rub with oil for crisper skins. Bake for 45 minutes to 1 hour, or until soft.

  2. Meanwhile, in a saucepan over medium heat melt butter and add flour; mix well. Cook for 3 minutes, stirring constantly.

  3. Remove from heat and slowly stir in milk. Return to heat and cook until thickened. Add mustard and peppers. Fold in tuna, olives and garlic.

  4. Cut a cross in the top of each potato and squeeze gently to open. Place on a serving plate and spoon the topping into each potato. Spoon tuna topping on potatoes to serve.
