Spicy vegetable and tuna in a cornmeal crust

Recipe Ingredients for Tuna Tamale Pie

1/4 c onion, chopped
1/4 c green pepper, chopped
2 cloves garlic, minced
1 c tomatoes, canned
2 tsp chili powder
1/2 tsp cumin
1/2 tsp paprika
1/2 c pinto beans, drained
2 oz tuna, drained
2 tsp cornmeal
1/4 c water
1 tbsp flour, unbleached
1 tsp olive oil
1/2 tsp baking powder
1/8 tsp salt

Recipe Directions for Tuna Tamale Pie

  1. Cook vegetables until soft.

  2. Add and simmer 5 minutes through spices.

  3. Add beans and tuna.

  4. Pour into individual casserole dish.

  5. Combine remaining ingredients and pour over tuna mixture.

  6. Bake at 375* for 30 minutes.
