I came up with this recipe when all I had in my cupboard was tuna.

Recipe Ingredients for Tuna stuffed Peppers

12 oz tuna in water, drained and flaked
1 tbsp tarragon
1 tbsp Mayonnaise, fat free
4 green peppers
1/2 cup bread crumbs

Recipe Directions for Tuna stuffed Peppers

  1. In a large bowl, combine two 6-ounce cans of tuna, 1 tablespoon mayonnaise and tarragon; mix well.

  2. Cut the tops off of 4 large bell peppers, and remove the seeds.

  3. Place them in an oiled baking dish.

  4. Spoon the tuna mixture into the cavity of each bell pepper, and sprinkle the top with dried bread crumbs.

  5. Place the baking dish in a 375° oven.

  6. Bake for 30 minutes, or until the top is crisp and well-browned and the filling is warm.
