Recipe Ingredients for Tuna Soup

2 chicken bouillon cubes
1 large onion(s), chopped
15 oz cannellini beans
6 oz tuna
15 oz canned diced tomatoes
1/2 tsp table salt
1/4 tsp black pepper
1/4 cup basil
1 slice of bread
1 garlic clove
2 roasted red peppers
1/8 teaspoon of cayenne
1 tablespoon of chicken broth

Recipe Directions for Tuna Soup

  1. In medium pot add 1/4 cup water and 1 bouillon cube over medium high heat, add onion and sauté until tender, about 5 minutes.

  2. Add beans, flaked tuna, tomatoes, 2 cups of water and last bouillon cube and simmer for 5 minutes. Stir in salt, pepper and basil; simmer for a few minutes more until thick.

  3. Meanwhile blend together 1 slice of bread (torn into pieces), 1 garlic clove, 2 roasted red peppers (from a water-packed jar), 1/8 teaspoon of cayenne and 1 tablespoon of broth from soup or enough broth to make a sauce. Add a dollop to each serving of stew
