Soboros are highly seasoned, slightly moist rice toppings used in Japanese cuisine. Usually used in small amounts (1-2 tbsp), a little goes a long way. This recipe is adapted from JustBento.com to be gluten-free and sugar-free (added sugars).

Recipe Ingredients for Tuna Soboro

5 oz chunk light tuna in water (with fluid)
1 tsp ginger, grated
3 tbsp grated carrot
2 tbsp lime juice
2 tbsp tamari, reduced sodium
1 tsp jalapeno, minced

Recipe Directions for Tuna Soboro

  1. Dumb whole can of tuna (with liquid) into small saucepot over medium heat.

  2. Add ginger, carrot, lime juice, and jalapeno. Cook until nearly all liquid is gone, breaking up tuna with fork or chopsticks so it's very flaky.

  3. Push tuna mixture to one side of pan and add tamari--it should sizzle. Quickly toss tuna mixture in sizzling tamari and remove from heat.

  4. Store in an airtight container for 3-4 days. I would rather eat immediately on brown rice :D
