Tangy, sweet, salty sauce over barely-seared rare tuna steaks, decadently tasty and low-calorie.

Recipe Ingredients for Tuna Seared With Honey-Soy-Wasabi Marinade

1 lb sashimi tuna
2 ounce soy sauce, low sodium
2 ounce honey
1 tsp salt
1 tsp black pepper
1 tsp wasabi powder
1 tbsp vegetable oil

Recipe Directions for Tuna Seared With Honey-Soy-Wasabi Marinade

  1. Mix soy sauce, honey, salt, 1 tsp pepper, and wasabi powder.

  2. Marinate tuna steak(s) in the mixture for at least 15 minutes, up to 2 hours.

  3. Remove tuna, shake off excess marinade, saving all the marinade.

  4. Sprinkle 1 tsp pepper on the tuna, patting it into surface.

  5. Heat cast iron pan on high flame until very hot.

  6. Add oil to pan, wait for it to smoke.

  7. Place tuna steak in pan, sear for 30 seconds only.

  8. Remove tuna, wait a minute for pan to heat, and sear other side for 30 seconds only. Tuna interior should be raw.

  9. Heat off, remove tuna to cutting board to cool briefly.

  10. Pour marinade into pan, allow to boil and thicken in residual heat.

  11. Slice tuna 1/8" to 1/4" thick. Arrange on serving plate.

  12. Pour thickened marinade sauce over tuna slices.

  13. Notes:

  14. Hot chili sauce can substitute for wasabi, use sparingly to taste.

  15. Brown sugar or mirin can substitute for honey, adjust to taste. If using mirin, you may need to whisk in some cornstarch when thickening the sauce.

  16. If using a stainless steel pan, use more oil, or tuna will stick. Discard oil before adding marinade.

  17. Do not use non-stick pan, as the desired searing temperature is too high.

  18. This marinade and preparation will work with other firm fish (e.g. swordfish), salmon, and good beef. Actually, I think it would even work on an old shoe.
