Delicious, healthy tuna salad with toasted (or raw) walnut pieces. Makes 4 sandwiches. This recipe calls for 3 (2.6 oz) pouches of tuna (the recipe builder didn't like the word 'pouch').

Recipe Ingredients for Tuna Salad Sandwich

8 slices whole wheat bread
7 4/5 oz albacore tuna
3 tbsp. light miracle whip
1/4 c. raw walnuts (chopped)
1/3 c. raw onion (chopped)
1 tbsp. light ranch dressing
12 leaves raw spinach

Recipe Directions for Tuna Salad Sandwich

  1. Chop walnuts, onion and wash spinach leaves

  2. (optional) quickly toast walnut pieces in frying pan, being sure not stir as they burn quickly

  3. Combine all ingredients except spinach and bread, add dashes of salt & pepper

  4. Spread on bread

  5. Top with 3 spinach leaves
